We have the scoop on preparing the perfect treat to impress your guests. The Chef at Gallagher Convention Centre, Chef Gordon Fraser, shares his recipe for what he calls “the best ice cream” that he has ever made.

Homemade vanilla ice cream

Ingredients;

25 gram Milk powder

500 ml Milk

300 ml Double cream

1 Vanilla pod, split

100 gram Caster sugar

5 x Egg yolks

Method;

In a saucepan,

Mix the milk powder with a bit of the milk until it forms a thick paste

Stir in the remaining milk

Add the cream

Add the split Vanilla pod and bring to boil

Remove from heat and infuse for 15 minutes

Whisk the egg yolks and sugar together pour the infused milk on top and mix well

Transfer the mixture to a clean saucepan & cook over a very gentle heat stirring continuously until the sauce coats the back of a wooden spoon

Do not boil the mixture as it will split

Cool the mixture & strain

Put in an ice cream machine, churn & freeze
