Chef Jose Rivera Vazquez has a quick solution to producing a delicious and easy dessert at home. The GCCC Executive Chef, Chef Jose shared an easy recipe for chocolate mousse that only needs four simple ingredients and leaves room for you to add a twist if you want to.
Chocolate mousse
Ingredients
1 1/2 cups whipping cream
1/4 cup cocoa powder, sifted, use 1/3 cup for a dark chocolate flavour
1/2 cup icing sugar, sifted, use 1/4 cup for a dark chocolate flavour
1/4 teaspoon almond extract can be added (optional)
Steps to the perfect mousse:
- In a chilled mixing bowl, start whipping the cream. Whip the cream until it starts to thicken.
- Add the sifted icing sugar and cocoa powder. Continue to blend until stiff peaks form.
- You can now add the almond extract if you choose to add it.
- Enjoy immediately or add to serving bowls and refrigerate until ready to serve.
Add a twist:
According to chef Jose, this recipe leaves room to add your own twist if you choose to.
Originally from Mexico, he favours adding a little taste of tequila to his mousse. Chef Jose’s twist entails taking 100g of fresh raspberries and 2g of ground black pepper and soaking it in a tot of tequila, and then gently folding the soaked and spiced berries into the mousse before refrigerating.
Chef Jose notes that if the tequila and pepper are a step too adventurous for your taste, the berries by themselves will add a lovely taste to the mousse.
