Easy & delicious butternut soup
Gallagher Convention Centre Catering has a well-established reputation for impressive dishes. However, not all delicious meals have to be complicated. Here is an easy and tasty soup recipe that you can make yourself.
Our chefs suggest that you warm up this winter with this tasty soup with fresh bread on the side.
Ingredients
- 15 ml Margarine/butter
- 1 Onion, cleaned and diced
- 2 cloves garlic, cleaned and crushed
- 5 ml / 1 tsp ground cinnamon
- 1 kg Butternut, cleaned and diced
- 750 ml / 3 cups of water
- 1 Vegetable stock
- 250 ml (1 cup) plain yoghurt
Method
Melt the margarine or butter in a deep pot. Add the garlic and the onion to the pot and fry until soft.
Add the cinnamon to the pot and fry for 2 minutes to combine and release the flavour.
Add the diced butternut, water and vegetable stock to the pot and stir the ingredients well.
Bring the contents of the pot to boil. Then reduce the heat and let it simmer until the butternut is tender. This should take around 30 minutes, but it may take a little longer.
Remove the soup from the heat and blend it until smooth with a stick blender or food processor.
Stir in the yoghurt, and then season the soup to taste.
Chef’s tip: You can substitute the yoghurt for cream for a creamier soup.
